With notes of hibiscus tea, ginger, cinnamon, cloves, and star anise, this is our take on the Jamaican dinner table staple. We know and love it as Sorrel across the Caribbean, drinks made with dried hibiscus can be found across the African continent and diaspora, including Nigeria (Zobo), Senegal (Bissap), Egypt (Karkade), and Latin America (Agua de Jamaica.)
While warm porridge isn't exclusive to the Caribbean, variations made with cornmeal, plantain, and peanut are often mixed with coconut cream, cinnamon, nutmeg, and other spices across the region and diaspora. For many of us, the sweet scents take us back to those kitchen tables of our childhood, where one bowl never seemed to be enough.
